MEXICAN GRILLED CHEESE SANDWICH

MEXICAN GRILLED CHEESE SANDWICH
(spice up an old favorite)

MEXICAN GRILLED CHEESE SANDWICH

white bread
pepper jack cheese
butter,softened or melted
taco seasoning mix
(salsa as a dip)

Directions
1 teaspoon taco seasoning per 2 tablespoons butter
(this will make 2 sandwiches)
Mix seasoning into melted butter and coat the outside of each slice of bread.
Place buttered side down on griddle or skillet on medium heat.  Place sliced pepper jack cheese on one slice and cover with another slice of bread, with buttered side up. Cook until golden brown on both sides, turning once.  Cheese should be melted.

Serve with salsa as a dip

I like Old El Paso taco seasoning mix the best for this recipe, but use what you have.

I melt the butter because it is faster.
Add seasoning to already melted butter.

mix well together

cover one side of each slice of bread with butter mixture

place buttered side down on skillet over medium heat and
cover with slices of pepper jack cheese

place another slice of bread on top and cook until
golden brown on both sides and cheese is melted.
