HALIBUT-ASPARAGUS STIR-FRY


HALIBUT-ASPARAGUS STIR-FRY

1 pound halibut fillets, cut into 1-inch pieces
1/2 medium onion, thinly sliced
3 cloves garlic, finely chopped
1 teaspoon gingerroot, finely chopped
10 oz asparagus cuts
3 cups sliced mushrooms
1 medium tomato, cut into thin wedges
2 tablespoons soy sauce
1 tablespoon lemon juice

Directions
Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat.  Add fish, onion, garlic, gingerroot and asparagus; stir-fry for 3 minutes or until fish almost flakes with fork.
Carefully stir in remaining ingredients.  Cook until heated through and fish flakes easily with fork.
Serve with additional soy sauce in desired.

Snap or cut off the tough ends of the asparagus stalks and wash them well.
Cut the stalks into 1-inch pieces.
 

Cut, chop and slice remaining ingredients. 
This recipe cooks so fast, you will want everything ready to go.

Stir-fry for 3 minutes.
