PANNEKOEKEN - Dutch Pancakes

PANNEKOEKEN
(Dutch Pancakes)


PANNEKOEKEN
(Dutch Pancakes)

3 eggs
2 cups milk
1 cup flour
salt

Directions
Mix into batter (it will be very thin).   Heat skillet, using half butter and half shortening to grease the pan.  Put in a small amount of batter, tipping the pan so that the whole bottom is covered.  Fry until golden, turn and fry the other side.  Slip onto a dinner plate, cover with sugar, jam, or fresh mashed and sweetened strawberries.  Roll up , sprinkle the top with sugar, and serve.

Note:  My mother always served them with butter and cinnamon and sugar and then rolled them.

you will want a thin batter

Tip the pan so that the whole bottom is covered evenly


Flip over with spatula and brown other side


You can...
Lightly butter and sprinkle with cinnamon and sugar
or
cover with sugar, jam, or fresh mashed and sweetened strawberries
