 BAKED FISH WITH FRUIT SALSA
Crispy and Tropical


CRISPY BAKED FISH WITH TROPICAL FRUIT SALSA

Fruit Salsa
1 cup pineapple, chopped
2 kiwifruit, peeled and chopped
1 mango, peeled, pitted and chopped
1 papaya, peeled, seeded and chopped
1 teaspoon red pepper flakes
1 tablespoon chopped fresh cilantro
1 tablespoon finely chopped red onion
2 tablespoons lime juice

Directions
Mix all ingredients in glass bowl.
Cover and refrigerate for 1 hour to blend flavors

Baked Fish
1 pound orange roughy fillets, or other white fish fillets
(I used flounder)
3 tablespoons butter
2/3 cup Original Bisquick mix
1/4 cup yellow cornmeal
1 teaspoon chili powder
1-1/4 teaspoons salt
1 egg, beaten

Directions
Heat oven to 425 degrees
Melt butter in 13x9 inch pan, in oven.
Mix Bisquick, cornmeal, chili powder and salt together.
Dip fish into egg, then coat with Bisquick mixture.  Place in pan.
Bake uncovered for 10 minutes, turn fish. 
Bake about 10 minutes longer or until fish flakes easily with fork. 
Serve with salsa.

Chop fruits, onion and cilantro


Mix all ingredients in glass bowl.
Cover and refrigerate for 1 hour.


Mix Bisquick, cornmeal, chili powder and salt


Melt butter in baking dish, in oven

(my oomzegger, Ashley made me that hot plate)

Dip fish into egg


Coat in Bisquick mixture


Place in pan


Bake for 10 minutes; turn fish.
Bake about 10 minutes longer or until fish flakes easily with fork


Serve with fruit salsa



Enjoy any leftover fruit salsa with tortilla chips!
