(Farmers Cheese Soup)
BOERENKAAS SOEP
4 tsp. butter
1 cup onions, chopped
2 carrots, diced
2 potatoes, peeled and diced
1/2 lb. cauliflower florets
1/4 lb. celery diced
1 qt. chicken stock
4 slices lean bacon
4 slices white bread
1/4 lb. imported Gouda cheese
Directions
In heavy pan, melt butter, add vegetables and cook for about 5 minutes, stirring frequentlly. Add the soup stock, bring to a boil, lower the heat and simmer until vegetables are tender, but not too soft. Meanwhile, in a heavy skillet, fry the bacon until slices are brown and crisp around the edges, remove and drain on paper towels. In the bacon fat in the skillet fry the slices (home-made type bread, cut 1/2 inch thick) of bread until crisp and brown on both sides. Drain bread on paper towels. To serve, preheat broiler. Pour soup into oven proof tureen or casserole. Float the bacon slices on the soup, cover the bacon by arranging the fried bread on top, then add the sliced Gouda cheese to mask the entire surface of the soup. Broil (about 3 inches from the heat) for 2-3 minutes. Cheese should be completely melted, do not broil past a delicate brown.
While the vegetables or cooking, you may want to add salt and pepper to taste.
When you place the bread in the bacon fat, coat both sides first
