1 level tsp. instant yeast
1-1/4 cup warm milk
1 cup buckwheat flour
(you will find it in the organic section of the market)
1 cup flour

1 tbsp. milk
1 tsp. sugar
1/2 tsp. salt
1 tbsp. butter to melt in frying pan
1 pound fresh strawberries
1 tbsp. sugar

1 tbsp. powdered sugar (more if needed)

Directions
Rinse and slice strawberries. Place strawberries in a bowl and add 1 tablespoon of sugar. Cover and refrigerate for 1 hour.
In a chilled bowl, beat cream, vanilla, and powdered sugar on high speed until stiff.

Dissolve the yeast in the warm milk. In a separate bowl, combine the buckwheat flour, flour, sugar, and salt. In a small bowl beat eggs and 1 tbsp. of milk. Add eggs and 1/2 of the warm milk to the dry mixture and whisk smooth. Now add the remaining milk and whisk again. Cover the bowl with plastic wrap and allow to rest for an hour.
Melt butter in a frying pan. When it sizzles, add teaspoonfuls of the batter in circular movements to create the mini pancakes. Turn the Poffertjes around as soon as the bottom has set, using a knife.
Serve Poffertjes on a dinner plate, drizzle with melted butter, sprinkle with powdered sugar, and top with strawberries and cream.

This was my favorite food when we went to Amsterdam besides the ice cream. They make them in a pan that has little divets in it. And lots of butter. I guess thats why our parents like butter. They use it in everything.
